Hi everybody – It’s Sunday cooking time!
Today I made a neat vegetarian dish that I thought I should share. Images are clickable.
This dish is enough to feed 4 grown men with good appetite, which should translate to 6-8 “ordinary” servings. The leftovers (if any) are fine to freeze and just microwave when you are in a hurry/lazy.
The ingredients: zucchini, cauliflower, mini-aubergine, onion, crushed tomatoes, baby corn, egg noodles and spices.
Start by washing and chopping the big vegetables.
Put the zucchini and aubergine in a hot wok pan (if you don’t have one, use a big pot) with cooking oil and plenty of salt.
Shortly after, add the cauliflower and baby corn.
Chop one onion and slice two pieces of garlic. Use a sharp knife to make the garlic slices as thin as possible. Add them to the pan.
Spice time! Use two parts tandoori spice, one part kebab spice and one part paprika powder. When you have added as much as you dare, add at least twice as much! None of these spices are strong, and will simply add flavor.
Now, add two cans of crushed tomatoes and stir. Slightly lower the heat (but not to much).
Put on some water for the noodles. Or rice, pasta, cous cous, potatoes or whatever you prefer.
Piri piri! For a dish this size, you need at least 5 piri piris. Be aware that they are quite strong, so make sure you have no cuts on your fingers or so when you handle them.
Start by lining them up in a row and crush them with your knife (if you use fresh piri piri, skip this step).
Then chop them up as much as you can (don’t use a jagged knife). As you can see, there are plenty of seeds – try to keep them from flying away. Put everything in the pan and stir.
While the stew bubbles and fizzes, lets make a salad! Take half a head of iceberg lettuce, cut it and rinse it well.
Peel half a cucumber and chop it up.
Add some orange or yellow pepper.
…And some fresh tomato.
Finish off with some radish.
And finally some corn. Salad done!
The egg noodles are suddenly done!
Pour out the water and add the noodles to the pan.
Stir until everything is mixed. All done!
Serve with the salad, some white bread and water. Bon appétit!
